Maya was born in Martinique, she grew up in Guadeloupe and went to school in France.
Randy was born in Pennsylvania and grew up in Massachusetts.

They met in St Barth’s in the mid 70’s and lived on a sailboat for 8 years before moving ashore.
Maya’s Restaurant opened in the late fall of 1984.

Maya’s concept is to change the menu daily, use the freshest products available, and keep things simple and clean. There are five or six appetizers daily; usually soup, three salads, ceviche, and fish tartar or carpaccio. Main courses include two fresh fish, often local mahi-mahi, wahoo, red snapper or yellow fin tuna, sometimes imported salmon, turbot or sole, plus shrimp, local langouste, calamari, chicken, and beef or lamb. All main courses are served with vegetables.

Desserts are constant: Maya’s chocolate cake, orange cake and coconut tart; homemade sorbets and ice creams

Le concept de Maya’s est de quotidiennement changer le menu, utilisant les produits du marché du jour pour proposer une cuisine simple et fraîche.

A la carte, 5 à 6 entrées, généralement une soupe, trois salades, un ceviche et un tartare ou un carpaccio de poisson. Tous accompagnés de légumes, les plats mettent à l’honneur langouste et poissons locaux, dorade, wahoo, vivaneau ou thon jaune.

Au menu également saumon, turbot ou sole importés, crevettes, calamars, poulet, bœuf et agneau.

Les desserts sont des intemporels: gâteau au chocolat de Maya, gâteau à l’orange et tarte à la noix de coco. Sorbets et glaces sont faits maison.
